The pan is 99 percent iron and 1 percent carbon -- no nonstick coatings, no PFOA, no PTFE -- finished only with a thin layer of organic beeswax that washes off before the first seasoning. Once that seasoning builds, the surface releases crepes with the slickness of Teflon and none of the four-year replacement cycle.
The shallow, sloped 8. 25-inch cooking surface and low rim are designed for the spread-and-flip motion of crepe technique, and the steel responds to heat changes faster than cast iron.
