The 14-gauge aluminum body is run through an electrochemical hard-anodizing process that converts the outer surface of the metal itself into aluminum oxide — a layer harder than stainless steel and chemically integrated, not coated. That single design choice is why the POB-9133 cannot chip, flake, peel, pit, or rust under any kitchen condition, including direct contact with citrus and tomato-based recipes that destroy untreated aluminum.
