American black walnut runs 1,010 on the Janka hardness scale — softer than hard maple but still dense enough to resist deep knife scarring, with a grain pattern that hides cosmetic wear better than lighter woods. The 18x12-inch board is 1.
5 inches thick and nine pounds — enough mass to stay flat on a counter without slipping, with edge-grain construction that resists warping and reversibility that doubles the usable surface life. NSF certification means this board meets commercial sanitation standards.
Maintenance is mineral oil every few weeks and a light sanding with fine-grit paper every few years to restore the surface completely. At roughly $200, the cost over a 20-year lifespan works out to $10 per year — compared to replacing a $25 plastic board every two years.
Boos covers their boards with a limited warranty against defects in materials and workmanship. The walnut version costs more than maple, and looks like it.
