The original Mighty chef knife uses proprietary high-carbon molybdenum-vanadium steel hardened to 59-61 HRC, producing an edge that holds longer than most German knives and sharpens easier than most Japanese ones. The 2mm spine tapers to a razor-thin edge that glides through produce with minimal resistance, while the dimpled Pakkawood handle provides a secure grip even when wet.
At roughly $175, the cost-per-year over a 25-year lifespan is under $7 -- less than a single cheap knife that dulls in months. The blade is fully sharpenable on standard whetstones, and MAC offers a professional sharpening service.
Wirecutter has recommended this knife for over a decade. The MTH-80 does not win points for flash or heritage branding.
It wins because professional cooks who cut eight hours a day choose it over knives costing three times as much.
