The MTH-80 is an 8-inch chef knife ground from sub-zero tempered high-carbon molybdenum vanadium steel, hardened to 59-61 HRC on the Rockwell scale. That hardness means the edge holds longer than German steel equivalents and requires less frequent sharpening, while the 2mm spine taper delivers a blade thin enough for precision work without sacrificing structural integrity.
