The pan is forged from a single sheet of heavy-gauge black carbon steel -- pure iron and carbon, no coatings, no PTFE, no PFOA. Once seasoned with a few rounds of high-heat oil, the surface releases crepes and eggs as cleanly as anything Teflon-coated, and unlike nonstick it actually improves with every cook.

The handle is welded to the body with no rivets, eliminating the standard failure point that ends most pans. Matfer covers its Excellence line with a limited lifetime warranty, and carbon steel is functionally immortal -- if it ever rusts through, sand and re-season it.
