The brushed stainless steel shell houses an L-shaped gas burner that distributes heat across the 16-inch cordierite baking stone, large enough for a proper 16-inch pizza without the cramped quarters of smaller models. The propane-powered design eliminates the learning curve of wood-fired ovens while delivering comparable temperatures.

The cordierite stone is the most likely component to need replacement — thermal shock from cold dough on a screaming-hot stone can cause cracking — but Ooni sells replacement stones for around $50. The body itself is simple fabricated steel with no electronics, no moving parts beyond the gas regulator, and nothing to fail under normal use.
